A GROUP of friends who have worked together in hotels in Hampshire celebrate the success of their Indian restaurant, which offers cuisine from different parts of the country.
Spice Route in Andover’s High Street opened in February last year during lockdown and was limited to take-out only.
The restrictions haven’t stopped the restaurant from building customer loyalty, as it has seen people return to try its varied menu.

House front Siva Santhanam said: ‘When we opened on the first day we had quite a few challenges with a new ordering system and we lost internet so we had four active mobile numbers but it worked.”
On May 15, when the lockdown was lifted, the restaurant was finally able to welcome customers to sit down for the first time.
“The food we serve is slightly different, our food is a varied Indian menu – very different – so people are curious. Our customers are not used to most of our dishes, they have so many flavors.
Siva said all the dishes use natural flavors and the spices are all ground on site.
The restaurant’s kitchen team is ‘very diverse’, hailing from different states of India including Delhi, Bombay and Punjab, with their most popular dishes being Delhi butter chicken and chicken chettinad kollk – which is composed of 23 different spices.

Siva met the restaurant’s other partners – Satish Kesavarappu, Arif Sadath and Joseph Michael Raj – while working in hotels. Siva and Satish initially decided to open the restaurant before Arif and Joseph arrived.
In total, they have around 80 years of experience in the hospitality industry.
“We are currently working on a new menu which we plan to launch in late June or early July,” Siva added.
