The announcement of new releases and the best additions to the Michelin Guide is followed with a watchful eye, their Stars, Bib Gourmand and Green Stars being distributed to restaurants around the world. This year, L’Enclume in Cartmen, Lake District, won the highest honor of three Michelin stars, becoming the eighth restaurant to do so in the UK.
But as soon as those coveted prizes were announced, the Michelin Guide The inspectors hit the road in search of new restaurants that deserve a place in the guide itself. Every month, busy inspectors will announce some of their favorite finds, and one of their newest picks just happens to be in South London.
Heritage opened in West Dulwich in early 2021, with head chef Dayashankar Sharma at the helm with 30 years of experience under his belt. Originally from Rajasthan in northern India, Dayashankar drew inspiration and love for cooking from his mother.

Talk to Great British Chefshe said: ‘I used to follow my mum everywhere when I was younger so whenever she was cooking in the kitchen I was there too.
“As I got older, the techniques she used started to interest me and I started asking questions.
“In India, almost every family prepares every meal from scratch, from breakfast to dinner, so there was a lot to see, then when there were festivals, there were lots of sweets and festive meals. , which was even more exciting.”
After studying hotel management, Dayashankar worked his way into the Oberoi group of hotels and then the Taj group, giving him an in-depth knowledge of Indian regional cuisine. His career path eventually took him to the UK, specifically to Reading, where he worked in a restaurant for one of his former employer’s brothers.
His culinary CV includes a 14-year stint at the famous Tamarind Group, owners of Tamarind and Zaika of Kensington, Frank Trunk Road in South Woodford, before opening his restaurant Dulwich. Heritage produces dishes inspired by “our ancestors and our cultural past”, while paying homage to India’s diverse culinary scene.
Dayashankar said Great hospitality : “This restaurant aims to explore the myriad of regional Indian cuisines and share this heritage with our customers.”
The 48-seat restaurant offers both an à la carte menu and a tasting menu (the latter is only served Tuesday through Thursday, however), where Dayashankar puts a contemporary twist on the country’s traditional and nostalgic recipes to unusual dishes from the lesser known Indian regions and communities. Customers will find an entire section of the menu dedicated to kebabs, where you can find tastes like Bharwan Mushroom (Portobello mushroom stuffed with feta cheese and crushed spices), Paneer Aur Pineapple Tikka and Salmon Methi Kebab (Scotch salmon fillet, leaves fenugreek, mustard & crushed red peppers). Michelin Guide inspectors noted “the tiger prawns are a must” – so keep an eye out for Nariyal Wala Jhinga, where you’ll find king prawns served with a creamy coconut and mustard sauce. Other dishes include Dhaba Wala Murgh (chicken legs, ground spices and Kashmiri chili), Kashmiri lamb and Baingan Kolhapuri (roasted eggplant served with spicy kolhapuri masala).
What if you have a sweet tooth? Expect to sink your teeth into dishes like Gulab Jamun Cheesecake, Jaggery Pudding or Heritage Indian Kulfi. Or if a liquid candy is more your thing, they also have a Bhojpura Cutting Chai after-dinner cocktail on the menu.
If you can’t find a spot at Heritage, Dayashankar also has the Jhakaas takeaway nearby.
